Spiced Tomato Jam


20 plum tomatoes
20 garlic cloves
472 ml red wine vinegar
256g caster sugar
2 tbsp. ground ginger
2 tbsp. salt
2 tsp. paprika
1 tsp. cayenne pepper
1 tsp. dry mustard
1 tsp. cloves
8 star anise
1 tsp. ground allspice


1) Cut the tomatoes in half, remove the seeds and roughly chop them.

2) Combine all of the ingredients in a pan and cook slowly over a medium heat until the mixture is thick and about 90% of the liquid has been reduced. This should take about 40 minutes. When the mixture starts to look shiny it’s ready.

3) Allow the mixture to cool slightly then remove the star anise and as many cloves as you can find.

4) Blend until it is completely smooth.

5) Pop it into jars and keep in the fridge.
